I am sure they are having a long lunch so people won't have to hurry and roll call so it gives everyone time to get there and get ready. It still leaves them with 4 hrs of wrestling and for most that is plenty. When camps don't have lunch in house they usually have a long lunch. My son is more excited to meet the wrestlers than having a camp. Usually camps are made up of wrestlers that they didn't get to see.And there are a lot of current wrestlers and future Olympians.

The roll calls are to make sure everyone is there on time so the sessions can begin promptly at the specified time. Sometimes it takes a while to get all the kids in order and warmed up properly and half the session is wasted before it has even started. As far as the lunch there is no particular reason for it just wanted to give the kids plenty of time to eat before the next session.
